Tennessee Caviar


My co-worker Lisa made this dish for our holiday cocktail hour tonight. It's delicious and perfect for any gathering.

Tennessee Caviar

1 can yellow corn - drained
1 can shoepeg (white) corn -drained
1 can Mexicorn - drained
1 can black beans - drained & rinsed well
1 can black-eyed peas - drained & rinsed well
2 cans Ro-Tel tomatoes (Original)
1 chopped onion
cilantro
4 oz Wishbone Italian dressing

Serve with Frito Scoops

I read the title of this post, and as I was waiting for the page to load, I wondered if I really wanted to know what this was, but it looks really tasty. I'm not sure what the white and mexicorn is though...
