Microwave Peanut Brittle



I was telling my sister about how easy this recipe is and thought since we're all pressed for time during the holidays, I would share with everyone. This is yet again another fabulous recipe from the ICF Cookbook which I just found out is no longer being printed, so if you know any old Italian ladies in Gilroy, see if you can get a copy!

Peanut Brittle

Ingredients
1 cup sugar
1/2 cup corn syrup
1 1/2 cups peanuts
1 teaspoon vanilla
1 tablespoon butter
1 teaspoon baking soda

Start by greasing a baking sheet with crisco or butter and set aside. In a glass bowl mix the sugar and corn syrup then microwave for 4 mins. Take out, stir and add in the peanuts. Microwave for another 4 mins. Stir again, add in vanilla and butter and microwave for another 2 mins. (Watch it at this point, my microwave runs hot and I burned the first batch, you may only need 90 secs depending on how hot it runs). Once that's done, take it out again and stir in the baking soda, then immediately pour it onto the baking sheet. Let cool, then break into pieces! Voila!
