Colleen and Keira came over for some holiday baking and we had a wonderfully relaxing night. We made a ton of cookies and candies, but the one recipe I want to share is a really easy one. It take 5 minutes from start to finish, and I brought some samples in for my co-workers today and they can't get enough of it. It's from the St. Mary Italian Catholic Federation Cookbook a.k.a. the bible of good cooking. Here you go!
English Toffee
Ingredients:
1 cup butter
1 cup brown sugar
saltines
12 oz. package of chocolate chips
chopped almonds
Line a 9x13 pan with foil or wax paper. Then line it with saltines. In a pot, heat the butter and brown sugar for five minutes on high until it's boiling. Once it's boiling, poor it over the saltines, then immediately poor the chocolate chips over the hot mixture. Then add the chopped nuts on top and stick in the freezer or fridge to cool. In about an hour, you can take it our and break it up. It is the perfect combination of salty and sweet, and it great for goody bags for the holiday season! Enjoy!

1. St. Marys, as in Gilroy?
2. Saltine crackers?

I know the crackers sound weird, but it totally works! Just a little crunch and salt with your chocolate...
